Black eye Beans
Ingredients
500gr. 3alfa black-eyed beans
2 onions, finely chopped
2-3 cloves of garlic, finely chopped
1 bunch dill
1 bunch parsley
2 large tomatoes, cubed
2 tbsp. Tomato paste

Cooking method
Rinse the black-eyed beans well and boil them in a pot of water until they are tender. While they are boiling, prepare the sauce: In a pot, sauté the finely chopped onions in the oil. Add the garlic, the parsley, the dill, the tomato paste, the finely chopped tomatoes and 1 cup of water, and let the ingredients boil and reduce to a thick sauce. When the black-eyed beans are ready, strain them. Return them to the pot along with the sauce, mix, and let them boil together for a bit. Serve in deep plates
