Navy beans with olive oil, lemon and oregano
Ingredients
500gr. 3alfa Navy beans
1 teacup olive oil
1 onion, grated
the juice of 1 lemon
1 tbsp. oregano
salt, pepper
Cooking method
Soak the beans in cold water the previous night. In the morning, wash them well and boil in plenty of salted water for 20 minutes. Strain them and leave to the side. Heat the olive oil in a large pot and sauté the grated onion until it is translucent. Add the halfway boiled beans and lukewarm water until they are covered by 2 finger widths. Allow the ingredients to boil over a low fire for a half hour. Immediately after, add the salt, pepper and oregano. Continue cooking until it thickens well and the beans are tender. If needed, add some warm water. Finally, add the lemon. Boil for another 1-2 minutes and serve with skipjack in oil, green olives and pickled Florina pepper
