Fava beans with fennel
Ingredients
500gr. 3alfa fava split beans
2 onions
5-6 sprigs fennel
2-3 sprigs dill
olivesoil
coarse salt
Cooking method
In a pot, boil the fava split beans with approximately 1 liter of warm water. Once they simmer, skim the foam, add 3 sprigs of fennel, 1 whole cleaned onion, a pinch of coarse salt and wait for the mixture to reduce and become almost a puree. When they come to a boil, press with a fork so that they become completely puréed. Move to a bowl and add 1 finely chopped onion, plenty of oil, and salt. Add the fennel and the finely chopped dill, as well as a few olives
